Chef Michael Hunter – aka "The Hunter Chef" – is a master of local game meats and foraged edibles. Tonight, you'll have the unique chance to experience courses inspired by Canada's diverse regions and their specialties. With lush pairings from Rioja, Spain, chef Hunter will select ingredients from different regions of Canada, highlighting them with local, seasonal, and wild foods in a five-course feast!

venison, duck, and wild boar French Canadian meat pie
East Coast
wild boar belly and brussel sprouts
West Coast
Smoked Salmon
gaufrette potatoes, crème fraiche, pickled wild leeks, cured salmon roe
creamy polenta, wild mushrooms, garlic chili rapini
Pumpkin Toffee Pudding
Ontario pumpkin, pumpkin seeds, salted caramel, wild ginger ice cream
